Makes one loaf
- 2 cups of cold water
- 1 and a 1/2 cups of pumpkin seeds
- 1 cup of buckwheat or brown rice flour
- 1 cup of almonds
- 1/2 a cup of sunflower seeds
- 3 heaped tablespoons of psyllium husk powder
- 2 tablespoons of chia seeds
- 2 tablespoons of dried mixed herbs (I used herbs de provence but basil, rosemary, thyme, oregano etc are all great)
- salt and pepper to taste

Simply place the almonds and one cup of the pumpkin seeds in a food processor and blend for a couple of minutes until a smooth flour forms. Transfer this flour into a bowl and stir in the remaining half a cup of pumpkin seeds plus the buckwheat flour, sunflower seeds, psyllium husks, dried herbs and salt. Stir the mix well before gradually pouring in the water.
You’ll then need to let the mixture sit for an hour or so to let it fully absorb all the water and firm up. During which time you can heat the oven to 180C.
Once the mix is nice and firm (it can’t even be a tiny bit runny – if it is then add another spoon of psyillium) grease the base of a loaf tin with coconut or olive oil, pour the mix in and firmly press it down with a spoon or spatula. Then place the bread in the oven and bake for an hour (or even longer), until the top begins to brown and you can pull a knife out of the middle without any mix sticking to it. Finally, slice, smother in your favourite toppings and enjoy!
I normally store the bread in the fridge as it makes it last longer, and if you want to freeze it that works too, I normally slice it before freezing first though to make toasting easier!
This summer I will be back with PARK YOGA in Reading UK.
Previous summers we were doing small get togethers in local Chalfont Park, Reading (UK) and inspired more people to move, feel, practice yoga and mindfulness. It was great success as it helped people that were new in town to find their community, new friends and mind like people. It was perfect for people who felt intimidated by YOGA and were scared to join some established yoga classes.
This year I would like to continue with our PARK YOGA and reach even more people, connect them, give them sense of community and that they can trust each other.
We will practice Vinyasa flow & Yin yoga styles, which will gives us more energy but relaxation of mind and body at the same time. All whats needed in this rushed time we live in.
Practicing outdoors is pure pleasure. Breathing fresh air, feeling the ground, wind playing with our hair.....all senses are fired up.

One of my favourite things is brightening up gloomy days, spaces & people. Today I woke up into cloudy day and so I made this Healthy Pot full of Sunshine and Goodness !
INGREDIENTS:
Chia seeds
Honey
Fresh Strawberries
Banana
Rice milk (milk of your choice, preferably non dairy)
Nuts & seeds ( sunflower, sesame..anything)
Oats
PREPARATION:
1) Soak your chia seeds in warmer water with bit of honey
2) Meanwhile mix your banana, strawberries, oats & rice milk into thicker smoothie
3) Put some nuts and seeds on top of chia seeds
4) Pour your smoothie mix on top
5) Decorate the top with more fresh fruits and nuts.

This cake is for me one of the symbols of Czech summer. Mum always makes it for family get togethers and its gone in 5 minutes!
INGREDIENTS:
20g gelatine powder
500g fresh soft quark
1 yolk
5 spoons sugar ( brown or stevia or your preferences)
3 drops of Vanilla essence
250 ml of milk (rice, soy, coconut or cow)
PREPARATION:
1) put gelatine in 1/2 cup of water and leave for 20 min
2) boil milk (don't leave it boiling, stop when it reaches)
3) in blender mix sugar + gelatine + yolk +milk ----> mix it and after slowly keep adding quark
4) pour little bit of mix (1cm) into a cake tin and add ladyfingers biscuits. Pour little bit of juice from the fruits on the biscuits (if you are using frozen fruits then no juice needed). On the top add fruit of your choice (fresh or frozen)
5) Pour rest of the mix on top and put it in the fridge over night or leave it there 3-4h until it solidifies.
6) enjoy cold with more fresh fruits or on its own.

We live in the days where almost everybody felt at least once under high amount of stress, had troubles of sleeping, feel obese and generally quite sad or dissatisfied. In worse cases stress, insomnia, overload of work and depression is on menu every day.
Medical industry has learned to treat symptoms rather than roots of problems, offer you pills that are better because their supplier has changed and so on.
However we are just as guilty. Fast food has changed to fast work, fast lifestyle and even there is demand for fast yoga.. Many people much rather nod head for operation rather than spending 2h each day exercising to fix the problem themselves. Why, if they can have it faster!? Such body disconnection is harming not just to our physical body but mental and emotional too.. It leads to anxiety, paranoia, emotional eating...list is endless.
I respect western medicine but we need to find the balance and get to the root of issues not covering the melting pot and keep creating more side effects. I am no doctor but with experience I can tell you that prescription which says: Meditate 20min a day, exercise for 30 min a day, avoid processed foods, eat plenty of organic fruits & vegetable, spend more time in nature and less indoors, don't worry about things you can't control and ditch your TV, can in most cases clear many of your mental issues and illnesses..

This weeks my ISLAND ENERGY BALLS made it to family get together and they were gone in minutes!
Nobody could believe they can treat themselves guilt free and satisfy the sweet cravings.
This summer I am on mission to introduce healthy options to my family and other villagers as they still ride on the old age cakes full of sugar and gluten and then suffer from diabetes. So let the mission RAW SUMMER begin with this ISLAND ENERGY BALLS RECIPE:
INGREDIENTS:
2 bananas
2 cups of oats
2 cups of nut mix ( can be anything, seeds, dried fruits)
raw cacao powder
grated coconut
PREPARATION: put oats, nuts & seeds into food processor and give it a whizz. Then mash 2 bananas in a bowl and add the oats & nuts mix + 5 spoons of cacao (depends how much you like it or how dark you want them to be). Then get dirty :) Wash your hands and dive in..... make small balls with your hands and throw them into grated coconut or cacao powder for thin coating. Place them gently on a plate (grandmas plates are best) and chill them in the fridge for a bit or serve immediately. YUM!
